Vanilla is an orchid native to Mexico, particularly from the Totonacapan region, which, due to its climatic conditions and the type of soil that characterizes it, is ideal for its development. Today, this area includes the limits of the states of Puebla and Veracruz (on the Sierra Madre Oriental), as well as the coastal plain of Papantla (between the Cazones and Tecolutla rivers).

Vanilla is one of the most valued and popular spices in the world for its aroma and flavor, in addition to the fact that it is currently the second most expensive condiment, after saffron. However, its origin and history are still unknown by many Mexicans.

The scientific name of this plant is Vanilla planifolia, which forms clusters of no more than twenty greenish-yellow flowers, and its fruits (erroneously called pods, since the Spanish assimilated them with the shape of sword sheaths) are elongated capsules between fifteen and thirty centimeters long, thick, odourless, and with very small dark seeds.
